Sunday Italian Dinner, 01/08/2012

Ragu over Linguini: Cook 1/2 lb Bacon and onion for 10 to 15 Mins. Add cup of carrots and celery and 2 cloves of Garlic, cook for 10 Mins. Add 1 lb ground sausage and 1lb ground beef, cook til done. Add 2 cups of white wine and cook til reduced. Add 36oz of pureed canned tomatoes, salt peper to taste, simmer 2 hours. Add 2 cups whole milk, simmer additional 2 hours serve hot with fresh parmesan cheese.

Roasted Cauliflower: in a large plastic bag, coat two heads, cut into indvidual bite size in 6 to 10 tbls olive oil and 5 cloves minced garlic. Place in baking dish and squeeze fresh lemon over and salt and peper to taste, bake at 400 for 30 ro 40 mins until start to brown

Spinich and Strawberry Salad: 16oz spinich, 1lb sliced strawberries, 1 cup sliced cucumber, 5 sliced green onions, mix with dressing and serve with fetta cheese. dressing: couple of tablespoons of raspberry vinigar, honey, olive oil and poppyseeds, to your desired consistancy
